'correct' colour

With three light sources (exhibition hall, light booth, monitor) who is to say which one is correct to set the WB ?

I shot a rodeo under a mixture of lights. Even as the cowboys rode through the changing lights from mercury vapor, sodium and metal halide it drove my camera nuts.
