Always shoot colour, raw, convert in post.
That way with the colo(u)r sliders you can apply the equivalent of almost any filter you want.

I always shoot color (RAW), and convert in post. It just gives you so many more options. The only time I have ever set my camera to shoot in B&W was just to take a test shot to see what the scene would look like in B&W.

yep never in camera B&W, full color RAW. Then I look at individual color layers to see where the best contrasts are and frequently use that. I found some where along the line that the green channel will give very good B&W. I still shoot film when I want the look and feel of true B&W.
    It's not about the camera....

I think using in camera B&W restricts your options with your PP work

Isn't it a cool thing in nature that the colours never seem to clash...

Color, RAW and then Lightroom. Only B&W if it is film.

Yes. You can use the picture styles to shoot B&W in camera. Keep in mind that if you shoot jpeg, the picture styles are going to be baked into the images. If you shoot in RAW, you retain all of the info of the file and the picture style settings are not backed into your image.

Keep in mind that the preview you see on your LCD screen is a jpeg rendering of the image no mater what format you shoot in. So even if you are shooting RAW, the preview image is going to represent the picture style you had the camera set to so you can see a preview of the B&W image in the field and still remain all of the RAW benefits for later when you get home.

Thanks to everyone for your responses. A girl a my doctors office was asking me and since I haven't tried it I thought I would ask just to make sure I was right, and going by what everyone says I was correct. I have been thinking about trying it myself also so your answers will help us both out, Jeff
