How to focus for greatest DOP (20D)

I just got done reading Understand Exposure (great read), and the author makes numerous references to focusing for greatest DOP with his camera. It sounded like he would acknowledge that every point in his shot was going to be "infinity", so he would focus on a point just at the start of infinity, then the middle, then the point at the greatest distance away.

I was reading through my manual for my 20D, and am not seeing something that allows this option. I don't even know what it would be called actually, the book was slightly Nikon skewed, so I was taking his terms with a grain of salt.

Looking for something to try out for those wide-angle outside shots of landscape......
