Can someone tell me where I can find tips and operating parameters for shooting Black & White with a Nikon D300?

Silvio - everyone is going to tell ya to shoot color and do your own conversion in post. Do some research on the conversion and you will get a better looking b&w.

I assume you have Capture NX (my D300 come with it included, a great incentive to buy the camera). I assume that you have found the "Convert to Black and White" option (my system is in French - it's in the Light and Colour Menu under Photo Effects
You just choose convert to Black & White - which gives a rather flat image. Then you play with the colour sliders to change the tones. I usually find that with skin tones I push up the Green about 2/3 of the way then push up the Red about half as much. Then I check out the Histogram and increase contast.

In case you're interested, I read that there's a pro photographer in England. She shoots with an Fuji S5, so, not exactly a Nikon. Anyhow, what she does is she shoots black and white with the camera directly and with different WB settings.

The D300 does support a monochrome picture control. You can adjust this using different toning and color filter effects if you're shooting JPEGs and want to only spend a minimum of processing time.
