The "air" is actually liquid that is very cold. When the liquid form of it comes in contact with some surfaces it can leave a residue, even mar the surface. Some shops use it to clean the cameras. Let them, if they screw anythign up they are financially responsible for it. I would not recommend taking that sort of responsibility youself.
