Cropping while keeping entire image intact

I need help with a process I've been shown before is photoshop, but can't reproduce. I've been shown in the past how to crop an image to a specific proportion (8x10, 11x14, ect.) without having to lose any portion of the photo in the process. The method I was shown deals with increasing the canvas size, copying the borders of the photo and then using the transform tool to stretch the borders out to the canvas edge, from there one should be able to crop in any proportion without losing any portion of the image.

Has anyone ever heard of or used this method? Does anyone have any other suggestions on how this can be done?

    Thanks,
    Carlos

I'm curious, why wouldn't one simply scale the photo while constraining the proportions? What am I missing here?
    It's not about the camera....

The OP would rather stretch the image to fit than crop any or leave a border with the change in format. (Would not be my choice.) - Terry
