One of the first thing that I tend to do is to convert to b&w in the channel mixer (in an adjustment layer, it's always better to work with layers...). You can adjust the value of the red, green and blue channels to duplicate the effect of various color filters (something I am not very familiar with). I usually let the red channel at 100%. I also create a duplicate layer of the base layer, set to overlay, to boost contrast. Then you can play with the selective colors tool to tweak the density of various colors.
In the end, I don't think that there is one magical way to do it. My conversions usually involve 3 to 5 layers to fine tune the effects.
I definately like it better in color but the black and white affect is pretty cool too... I would crop off a little of the extra sky though because to me it seems to take away from the feild a little bit.
