Is it better to use the black and white settings or leave on color, then change over in photoshop?

You'll have a lot more options if you shoot in color and convert later. Obviously, you'll have a color original - but a b&w conversion in Photoshop gives you a lot more control over how the image looks.

I use Image > Adjust > Channel Mixer. Check the "Monochrome" box in the window that pops up. adjust the three sliders, but keep their total value at 100%. Do any overall lightening and darkening with Curves or Levels. Note that the three sliders can be adjusted to negative values for more options (for example: 160, 140, -200).

I agree that it is easier and gives you more options with the final result to take in colour and change to B&W later in Photoshop - for a simpler way to convert to B&W than advised below you can get good effects by just playing with Saturation levels I find, although by using Chanel Mixer you'll have more control with tones overall.

Shoot in color!!!!!

I'm primarily black and white, and also shoot the 20d. the b&w modes in camera could probably look good after some ps, but are a bad starting point. I've tested them all, even the color tones.

There are a million coversions, check the digital imaging forum for posts by Asylum Steve or Trevor, they both gave some detailed options.
