I don't know about the cameras you listed but...
I can answer some of you questions on a basic level. First off, ignore the digital zoom, you can accomplish the same thing on your computer by cropping and enlarging.
The manual focus ability is of suspect usefulness, you have to focus by looking at an enlarged portion of the LCD screen.
ISO is "film" sensitivity, the higher the ISO the more sensitive to light it is, but with a price, the higher the ISO the noisier(grainier) the image gets.
A friend of mine just bought the olympus, and on first glance it looks like a nice camera. The S60 is a nice camera, I used to own an S30 and I liked it.
I have no experience with the Fuji, but I don't know how you could get 6.2mp resolution out of a 3.1 mp sensor.
