How's it go, A bird in the hand ?

is worth 2 in the bush, ok its three shots in order of fright. not sure what kind it is,all three are cropped, taken this morning, while walking the dogs, shot while in the tree's then got spoked and followed as best as i could, background blurred as aspected, spot metering,f5.6, 1/2000 exposure, and my exposure bias was set to minus 1, is it true most people shoot at minus one to get the greatest color ratio on the senser, and that its easier to boost the highlights up after, but i shoot in high jpg, were as i'm thinking that it would be more benificial in raw format. any idea's on this, and some good advise to better the process of birds in flight in the field and not on the computer.
