Why do my image files get bigger?

I have some jpg images I took recently which are between 1.5 and 2 mbs each. When I crop them and save them as new files they increase to between 2.5 and 3 mbs. Then if I adjust the color, lighting and/or levels and save them again, they become even larger. Some up to 4 - 5 mbs each!

I am using Microsoft Digital Image Pro 10 software, saving them at 100% quality and storing the thumbnail within the image. It's not the thumbnail that is causing the larger size because when I unclick that option it doesn't make much difference.

Can anybody help me with this? Should I be working with a different format until I'm ready to print them?
