Best way to convert digital to B & W?

I was wondering, what is the best way/program/method etc. to convert digital images to black and white?

If you're using Photoshop, check out the Digital Imaging forum on this site - it's been discussed a few times. Think it might be in the "sticky" threads at the top.

I use the latest version of Nikon Capture. In Photo Effects there's a filter to covret to Black and white (or sepia etc) with a colour channel mixer, a contrast adjustment filer, etc. It works in single image mode or in batch. It works on NEF files or on JPG.
