exposure latitude

While mastering my new toy, a 20D, I've noticed just a little of what people are saying as digital having a narrower exposure latitude. I haven't really gotten into RAW work yet, but if I were to shoot in RAW mode a scene that wouldn't normally fit, exposure wise, could I expose two shots with the RAW tools and combine in PS?

Yes. You can do it with jpeg too though. Expose one shot for the highlights and one for the shadows, then combine in Photoshop.

It's a similar concept to using a graduated neutral density filter, but the advantage here is that you have full control over it after the shot is taken (ever get the split in the wrong spot? ) and it doesn't need to be a straight line like it would be with the filter.
