The spelling I is a tradition with the sirup produces here. I'll leave the explanation the web site . I have gotten to know these people (some of whom are neighbors) over the past several years and I always have a good time during sirup season!

that's interesting. Hey, you learn something new every day. Yeah, we make our own syrup also. We use dot have a huge set-up, with a bunch of trees all tapped and then we used the sap lines (rubber tubing) to connect them all and they would all run into a huge bucket at the bottom of the hill. We've shyed away from that, and tuned it down a bit, but we still make our own syrup, but just enough for our family.
