View Full Version : Bacon and Tomato Soup

Enjoy!

4 slices bacon
1 small onion, diced
1 tbs butter
2 tbs flour
1 15-oz can diced tomatoes in the liquid
dash of pepper
dash of salt
1 bay leaf
2 cups milk

Cook the bacon in a medium pot, when it's done put on paper towel to drain. Dump the fat out of the pan, and melt the butter (same pan) Once the butter is melted, add the onion. Cook until soft, stirring occasionally. Add flour and stir until it's fully absorbed.

Add the tomatoes, pepper, salt and bay leaf, bring to a boil. Cook for about two minutes over medium heat, should begin to thicken. Add milk and heat until hot but not boiling. Cut or break bacon, toss it in, remove the bay leaf and serve.

Comfort enough for those of us still getting some chilly weather, but not to heavy. :D

Dinner tonight, we like it with asiago cheese bagels from Panera.

I'm going to steal that recipe. I cheated yesterday and just threw some Boars head Bacon in a can of the Progresso Tomato Basil. Thanks for the recipe, it looks great.

I've been sticking mostly with vegetable soups but can't ignore my carnivorous tendencies forever... I'll try it! :)

Sounds good. I'd add a sprig of oregano and thyme, a couple of cloves of garlic, and a dollop of warmed goat cheese. serve with toasty baguette. Bleu cheese would work great also.

Almost makes me want a grilled cheese sandwich to dunk in it.

Made it last night myself with a grilled cheese sandwich. I will not be making it again. It was OK, but not quite what I was expecting.
